For anyone who has come across my substack and is new to my page, welcome! And to the OG's, I'm so happy you're here! I'll take a minute to introduce myself! I'm Lindsay Surowitz, mom of two boys (3 and 5 years), living in San Diego, and doing my best to live a healthy, happy, balanced life. I started my blog, Weeknight Bite, in 2012 as a creative outlet while working in the corporate insurance world. Back then, it was all about making easy, healthy weeknight meals after a long day at work. Since then, my instagram and blog have evolved and changed as my life and career path have, and now it's so much more than just weeknight dinners — it's all different types of recipes, lifestyle, motherhood, wellness and nutrition tips, and bits and pieces of my daily life and family. My recipes are always easy and approachable, made with minimal, healthy ingredients, and are meant to fuel you while also satisfying your cravings. I hope you love them and I'm excited to have you as part of this community.
